Jerusalem Cookbook
The Jerusalem Cookbook, out in September, has been keeping Sami and me busy for well over a year now. And when I say busy I mean months of recipe testing, researching, writing down stories and anecdotes, checking and double-checking.
It all culminated over the last three weeks when we were heavily involved in the shoot of all the recipes. Sarah Stephens was in charge of the kitchen, busily preparing dishes for the camera at a pace of a Speedy Gonzales, only much faster. Jonathan Lovekin, extra-talented, super-stoic photographer of Plenty, was doing his usual wonders. Sami and I just had to arrange dishes on plates, though most of them actually looked better in the pans (rustic and authentic).
Not much left now. Well, just getting all the clarifications back to the editor, layouts with the designer, proofing and probably another thing or two. Stay tuned.

September is much too far away! I simply cannot wait for this book... I have the first two and they have completely revolutionized the way I cook.
Looking very much forward to reading the new cookbook and getting into it. Can't really think of the tremendous amount of work which must be in such a project.
Side note: Have tried the "Avocado & crouton salad" from the Guardian website last week-end: great stuff! Would very much suggest leaving the bread out of it: healthier and left-overs will keep better than with yesterday's bread in it.
And I have tried the "Quinoa-Wild Garlic patties" with the salbitxada sauce - very delicious!! Any suggestion for a substitute of the wild garlic as its season is quite short? Can't think of any...
Keep on having such a brilliant influence on our family's week-end food! ;-)

@Peter, thanks for your comments and suggestions. I suggest chives and raw garlic as a substitute for the wild garlic.

I just bought the Ottolenghi cookbook on recommendation from a friend and everything about your food philosophy - the freshness, the colours and your shop's culture - captures what I love about cooking.

I am salivating with anticipation and have pre-ordered a while ago. Tomorrow night we have our first Ottolenghi potluck, with each course cooked by a different family, coming together at the table from the first two books. I love how this food pops with flavor.

A little good time tall tale. A couple of years ago I randomly happened to enter into the Islington restaurant straight of the plane from Copenhagen (where I live) bringing along a sound hangover. I got the best "bacon and eggs" I ever had in my life, and the world was suddenly beautiful again (I don't recommend flying with a hangover). Later I bought the Plenty and the Ottolenghi cook books and have tried cooking almost everything - and everything is astoundingly and wonderfully and amazingly good !
Guess I just wanted to thank you guys for doing such a good job.

Congratulations on your new cookbook! I LOVE "Plenty" and have frequently recommended it to friends (I've even converted a couple of carnivores with it!!).

I visited Jerusalem only 6 months after discovering my favourite place to eat in the world - Ottolenghi. I traveled there with no preconceived food expectations, but it turned into a gastronomical weekend that I have been raving about ever since - I completely see where your inspiration comes from.

Not only are your books food for the body, but nourishment for the soul. I thrive when I flick through your books.
I await timidly, and patiently for Jerusalem to unfurl.

I'm so excited about Jerusalem and was wondering if there's a similar ratio of vegetarian to meat recipes as in the other two? I'm a vegetarian so hoping for lots of meat- free recipes!

We are truly honored. And surprised too, as we didn't expect the postman so soon...
But we already tried the parsley and barley salad (with kamut instead): wonderful, fresh and intense at the same time. And the list of recipes to try as soon as possible is growing irremediably fast. :) To use in a different way the produce from our garden, courgette and tomato salad for tomorrow.

Just to let you know, I love your new Cookbook Jerusalem. I've already tried cooking your Wild Rice,Basmati and chickpeas and also the Salmon recipe. My family loves it.
Last night I made your "Ultimate Winter Couscous" for dinner, which my husband pronounced "a tzimmes by any other name." It was spectacular!!! Many thanks for keeping this household supplied with so many wonderful vegetarian dishes.
Hi, absolutely love all the recipe books , tried the spiced cookies this week from the Jerusalem book , fabulous ! thank you so much .Can you please let know if they can be frozen ?,I have a stall at the farmers market in Lincoln and judging by everyone's reaction to them , this weekend I anticipate that I won't be able to keep up with demand over the coming festive season .

Two months ago our marriage co-incided with discovering Plenty.
We both love to cook and eat and our Suday has become 'Yotam night' Now we have Jerusalem too.It's so exciting deciding what to cook then enjoying sitting down to eat your delicious recipies.

As does everyone who tries your food (whether making it myself or treating myself to a meal in your Islington store) I am a huge fan of your work! The flavours are fantastic, the love of food very apparent and the ingredient combinations original ... which brings me to my question. I am planning an Ottolenghi inspired Christmas dinner and am finding it challenging to match wines (we are making your prawns scallops and clams, cod fishcakes and basmati, chick-peas, currants and herbs - all from Jerusalem), any thoughts or suggestions would be hugely appreciated!?!

Love love love love love your book about Jerusalem food. I live in Thailand so I'm really trying to focus on learning how to cook great Thai food while I'm surrounded by all those gorgeous Thai ingredients. But sometimes I like to have something different like hummus, but can never seem to get it right.
Anyway, a while back I met a woman from Jordan out here in rural Thailand. I mentioned that I had made some hummus and she looked amazed - you make your own hummus????? She said she'd never thought of making hummus at home and indeed why would you if you live in Amman or Damascus or Jerusalem?
Actually I can never seem to get hummus exactly right, I don't know if it's the type of chickpeas I'm using or what. It is just never transcendent. There are no lemons here so I have to use limes.
But I have a question - if you (Yotam and Sami) lived in Jerusalem, would it ever enter your head to make your own hummus? Or your own baba ganoush? Your book is such a head spinning guide to where to eat in Jerusalem, one almost thinks why the hell try making it at home, let's go!!!
But of course, there are so many reasons to embark on the glorious enterprise of trying to make something yourself....

Just wanted to say thank you for the Jerusalem cookbook - it's fantastic, not just for us but for our 8mth old baby who we're weaning at the moment. He's currently chomping his way through burnt aubergine with pomegranate, and butternut squash with tahini. Best recipes for babies!!
