Mediterranean Feast

Yotam tries his hand at making couscous while actually making a puzzled Berber woman laugh out loud at her very first sight of a MAN touching her semolina jewels. Or a Sudanese man, looking after the hammam fire, bursts out in traditional song after cooking the most delectable cumin and saffron scented meat stew, tangia, in his glowing embers.
These are a couple of scenes from the first part of Yotam Ottolenghi’s Mediterranean Feast, a four part weekly series for More4, starting Monday, 12 November, at 9pm.
Followed by a crew from Keo productions Yotam travels to Morocco, Turkey, Tunisia and Israel to unravel some of the Mediterranean’s lesser-known cuisines. Along the way he meets cooks, restaurant chefs, farmers and fishermen and cooks with local ingredients giving them the Ottolenghi “treatment”.
In the first episode expect to see Marrakech’s palace walls, firmly governed by local bossy storks, a group of stoic fishermen allowing Yotam on their rickety boat, some lamb, some couscous, some olives and lots and lots of cumin and preserved lemon.

Another fantastic food show from Ottolenghi. His enthusiasm is so contagious, and I love the cuisines he promotes - and cooks! Yotam, how do you make those fantastic sardine balls in tomato sauce?

I was given Ottolenghi book by a friend recently and I have to say it's a very good cook book. I also watched the programme on channel 4 last night He's a nice guy, gentle and funny. I loved it when he was making the couscous with Moroccan lady in the village. I am going to eat at his restaurant in London this week. Well done Ottolenghi!!

@Sue, no cookbook for the series but all the recipes are being published on the Ottolenghi blog each week and on channel 4's website.
@Simone, the fisherman made them for me so I don't have an exact recipe. If you find a recipe for fish cakes which uses minced sardine flesh or another oily fish, add lots of herbs and make them into golf ball size burgers. Poach them in a sauce of tomatoes, preserved lemon, cumin, turmeric and garlic. This will have to be a case of experimenting!
Loved the first programme, thank you. I am going to Marrakech at Christmas and spending a couple of days in the Atlas Mountains. Was looking forward to it anyway but now can't wait for my food adventure to begin! Will also be buying the Ottolenghi cookbook.
Yotam, as an ex-Jerusalemite I adore watching you cook (and of course I have your Jerusalem cook book). One question: you mentioned on the programme that fish balls were a particularly Jewish food. Are you alluding to fried gefilte fish?
Loved the programme last night. So much colour and vibrancy in both location and food. Can't wait to make some of the recipes. However, you should try getting preserved lemons in Ireland, not to mention sumac, za'atar and all the other fascinating ingredients!

FANTASTIC! Superb first episode of Mediterranean Feast which left me feeling famished and wishing the week away ready for the next episode.
Dishes looked amazing, Morocco looked much more enticing that when I went two years ago(although it did rain for 6 of the 10 days!)
Found the whole programme very relaxing from the laid back presenting and the great combination of travel/history/culture thrown in with all of those delicious yet simple ingredients. Proof that simplicity is often best and no need for lots of swearing/shouting/gimmicks.
Shame no book to follow, but will be printing off the recipes every week without fail.
Bravo Yotam and Team - a triumph again! Think you should come and work your magic in Greece next - Kefalonia is calling!

Loved the show as I did your programme from jerusalem; it brought back many memories of Israel and Jerusalem.
My brother and I loved the show. We visited Jerusalem in 1994. We intend to visit Morocco.My brother Barrie is going to buy a tagine.We look forward to the rest of the series. Barrie visited Istanbul in 2008.Your charm and humour and graciousness was such a relief you are a true goodwill ambassador. Loving the series! Brought back memories of all the aromas and flavours of Jerusalem, Marrakech and Istanbul - all favourite places of ours.
Yotam comes across as such a enthusiastic, friendly guy who relates brilliantly to everyone he encounters. It is a real pleasure to watch him cook.

Fantastic program! Amazed with Turkey and Moroccan parts. Next time, i would also recommend you to visit western part of Turkey for vegetable recipes and south/southeastern part of Turkey for meat recipes. Congratulations and thank you for such an amazing program.

This programme is great. It brings back good memories of my travels in these places. I love Yotam's relaxed, gentle presentation. I've definitely been inspired to try some of the recipes. The lemons are being preservied as we speak! I very much look forward to my forthcoming trip to Islington for dinner.

I'm doing a lunch for 8 cooking the oven roasted chicken with hazelnut and rose water paste. The onion is already burnt (it is my trial cooking) and the chicken is only half time in the oven. Is it because I've used red onion? I cannot let it happen on the day. Help.

So many heartening and warm reactions. Those are fantastic.
Whilst doing the show I met an endless number of people cooking the most delicious food every day without giving it a single thought. This is sobering and inspiring and just goes to show that good food can be made and consumed without any decorum or sense of occasion. It should and can be part of life, full stop.
As for a cookbook, these recipes will definitely find themselves in a book one day. For now, they are all here, online.

I have really enjoyed watching your Mediterranean Feast series. So refreshingly presented and the recipes very inspiring. It was lovely to see all the different markets you visited and the people you encountered. Cuisine from other cultures always looks so much more exotic than our own! Cant wait to try some of the recipes and look forward to another series from you in future.

Me my husband and my eight year old son watched the Morroco episode tonight on C4. We all loved it, you are a warm and funny man as my son says, he loves you so much! Wonderfully colourful and moutwatering dishes, I will be making the lamb dish on Sunday. Wish you had a restaurant in south west London, specifically Wandsworth, inshallah you will open one here soon, Islington is bit of a trek for us. Love you! x
In Australia, Jerusalem was on last tv week and Mediterranean Feast Is on now - my mum and I are watching it and we have just loved the shows. It's not just the amazing recipes and the wonderful people who make them - Yotam is a gracious guest and a humble host. Enjoyable watching! Can't wait to make some of the dishes!

I've never tried mediterranean food before (I'm more of an asian flavours type of cook), so I find it quite intimidating, but if it looks as easy and delicious as those in your Mediterranean Feast tv series, I'm sold. I especially like the grilled red mullet recipe from the Tunisia episode, which I'm planning to make next week. A question though, if I grill the mullet in the oven won't the fish lack the beautiful charcoally flavour? Also, please please reconsider writing a book about this series...

It was wonderful seeing all my favorite places in Israel on your programme.
If ever you are in Australia I would love you to come to my cafe. Our shakshuka may not be as good as Dr Shakshuka's, but its close! You may even find some little cakes in our display that were inspired by your recipes.

Just finished watching Mediterranean Feast in Australia. Awesome, most weekends now feature a combination of your recipes to make our own feast.
In the episode on Tunisia you came across a place selling cannellini beans with preserved lemon. You made a typical tongue in cheek remark about the most popular food being "baked beans". Any chance for a recipe for them? They sounded fab!

Absolutely loved the series. Great format, really get a feel for the wonderful places and people Yotam visits. So much better than the traditional chef in a pristine kitchen format.
