Autumn '09 cooking classes

Hurry up and and sign up for our next set of hands-on cookery classes. To do this, please call or email Leiths on 020 8749 6400 or info@leiths.com. A class costs £125.
The spring classes are all full now but you should be able to find places on the following dates:
September 5th
Lamb kebabs with pine nuts, tahini sauce, warm butter and parsley
Roasted potato wedges with paprika and garlic
Tomato and cucumber salad with quinoa, lemon, coriander and spring onion
Fresh berries with orange blossom cream
October 17th
Mezze
Roasted aubergine with a sharp salsa of walnut, pomegranate and coriander
Fried sweet potato with rosemary and sage
Butterbean mash with lemon juice, garlic, spring onion and sumac
Char-grilled courgette with balsamic vinegar reduction, basil and caprini freschi
Roasted red peppers with garlic, lemon and fresh oregano
November 14th
Salsify, pecorino and watercress salad with caper vinaigrette
Whole pan-fried red mullet
Bulgur and cauliflower tabbouleh with red onion, pomegranate, celery, lemon
and sweet spices
Poached quince with star anise, blackberries and vanilla ice-cream
December 5th
Whole quail stuffed with pork, pine nuts and herbs, braised with dried apricots and tamarind
Saffron couscous with butter and chervil
Kohlrabi and white cabbage slaw with lemon zest, tarragon, dill and sesame seeds
Baked pears in white wine and cardamom, served with crème fraiche

I've just booked a place on the Oct 17th class, really looking forward to it, but will it definitely be the above vegetarian menu? When I booked with Leiths they said they couldn't confirm the menu as they didn't have it yet.

I only recently sent the menu to Leiths. I am sure they can confirm it now. In any case, the October 17th menu is final and as it appears above.

I was at Leiths on Sat with my friend camilla. We had a wonderful morning with Sami and Yotam and Melanie, our caring host. it was so good to meet my favourite chefs responsible for Ottolenghi as I am a great fan of the food which I have often cooked for customers and friends here in Dublin. I am also attached to my Leiths Fish bible and Vegetable bible so it was win win all round. thanks so much and anyone going to future sessions you are in for a wonderful few hours of culinary heaven.

Are you going to be doing any courses on cakes or patisserie? I make vegan cakes - so may not be able to do all the recipes but could adapt them e.g. using olive oil and almond milk. But would really like to learn some new techniques for presentation as I think your cakes are beautiful.

We did have a few classes in the past about baking and patisserie. At the moment we don't have plans for any more. The savoury courses seem to be more popular. Hopefully, next year!
I bought your cookbook a few months back now, but have only just cooked something from it - namely the upside down orange polenta cake and the apple maple syrup cake. I have never ever had such rave reviews about any cake I have made - they were sensational and the guys I work with went crazy over them. Suffice it to say I can't wait to try out lots of the other recipes. Its a pity you don't have any plans for classes for baking etc., I'd be there like a shot. When is your next cookbook due? I can't wait.

O my God! I have just discovered that you do cooking classes! I'm so flying over there in october (I don't live in U.K. any more).
Something to really look foward after my summer season.

@ Lana, just make sure you sort out a space in the class before you book your flight. They tend to fill up very very quickly. Eager to see you in October.
Dear Yotam,
As a seventeen year old who'd like to think of herself as a bit of a foodie, I thoroughly enjoyed your patisserie demonstration at Leith's on 9 March. Following it, I've been on an Ottolenghi binge - over the Easter holidays, your cookbook and Guardian articles were my first port of call whenever I entered the kitchen! From simple salads to more elaborate tarts (the banana and hazelnut tart was the pastry I've made), I particluarly relished the sweet potato and chickpea casserole and the plum clafoutis. The brownie shortbreads that you showed us how to make made me the most popular person (if only for one lesson!) in my French class...Cooking has been a great break from A-Level revision, but now that exam season is looming, I'm going to have to concentrate solely on textbooks for a while. I am already looking forward to hitting the kitchen again after they are over!

I got your book for christmas and I absolutely love it.
I would love to come to a class but am well known for not being the worlds greatest cook!
Is there a place for a novice who is eager to learn or should I keep practicing at home first?

Hajra, we are all novices! More seriously, people who come to our classes cover every possible level of cooking and they all have a great time. I am afraid all the autumn classes are full now but we will announce next year's classes soon.
PLEASE can you do more courses, i have been trying to get on one of your courses for ages and they are always full. Or just set up your own cooking school so much easier!

I wanted to ask about the lovely aubergine dish i had which said 'roasted aubergine with miso, spring onion chilli and sesame seeds' i wanted to make this dish at home but wasn't sure about the miso? how is that done please?
