Less Meat - It Makes Sense

I spent my lunch hour yesterday with a huge bunch of people I didn't know. Why? Well, I was invited to a lunch in St. James's Park that kick-started a campaign by Paul McCartney and his family to encourage us to eat less meat.
I don't often do campaigns. But I think that this one just makes sense. It makes sense to eat a little less of something that is so labour intensive and contributes dramatically to the total green house gas emissions. It makes sense to think of meat as something special, less of an every-day triviality.
Especially, it makes sense because there is so much else out there!

Totally agree about meat reduction -
I bought your fab cookbook and have cooked the veg things from it. Is there any chance of you doing a New Vegetarian Cookbook ( like your recipes in the Guardian)? That would be sooo wonderful.
So far I adore:
asparagus and cheery toms courgette and halloumi roast,
and aubergine with coriander marinade.

May I start with saying how much I enjoyed the cooking class in May at Leiths; Since then I have sucessfully recreated the menu a couple of times and it all works perfectly - the guests love it!!!
One question regarding Israel - I am going on holiday there in August and am looking for suggestions of great restaurants; Who would know the restaurant scene there better than yourselves?!
I need a couple of very very special places for special occasions and then one or two more relaxed ones for good dinners

I to would love a vegetarian Ottolenghi cookbook, preferably with lots and lots of salads! Keep up the good work! love the cucumber and chili salad and also the herb salad.

I am afraid I only know restaurants in Tel Aviv. On the more expensive and formal side, I recommend Herbert Samuel and Toto.
Informal, Brasserie and Barbunia (very basic).

I would like to invite you to become prime minister of a new country I am proposing, to resolve the Israeli-Palestinian conflict. It would extend from Manta Ray in the south to TAU in the north with the Ayalon Highway as its eastern border. Obviously it would be a very small country, but as a city state for the Jewish people I believe it would be more than adequate. Claudia Roden would be president. I am hoping that Sami would be the Palestinian ambassador. Then we could all get on with our true destinies, eating and talking.

Sara, I suggest replacing the chicken with the same amount of semi-cooked root vegetables, such as waxy potato, celeriac, swede or even butternut squash. Good luck!

Glad to hear that a veg cookbook is in the making! I hope you will also make it vegan-friendly (not necessarily all vegan, but with substitution options).
Emme, I am afraid I didn't quite think of vegans when writing the recipes but you will find many of them suitable or easily adjustable.
