Gula Jawa, a palm sugar, is an icon of South East Asian cooking named after Java in Indonesia. It is a wonderful, rich ingredient that adds depth as well as sweetness to any dish, savoury or sweet, and we’ve been using it extensively in NOPI. The production process is similar to that of maple syrup, in this case a palm tree is tapped for its sap, and the sap is then reduced to a very thick syrup and dried into blocks. Gula jawa is wonderfully versatile and can be shaved into curries and sauces like chilli jam, or used in desserts as a syrup or caramel.
