This is a sweet, viscous wine made from rice, water and koji: a cultured rice used to spur fermentation. Mirin is widely available but the difference between one brand and another is enormous. Brands which include added corn syrup or preservatives should be avoided.


Glutinous rice, malted rice, alcohol (14%), sugar, water.
