This is as sweet as it gets in the world of vinegar. It’s dark, viscous and almost molasses-like in its richness. We love to drizzle it on ice cream. It’s aged for 25 years in oak barrels and then bottled without filtering. A little goes a long way so this is occasional-use, top-shelf luxury. We keep it close to the action in our NOPI kitchen.
