We have chosen two half sized bottles of sherry from a small, quality focused bodega situated in Chipiona, a coastal town just west of Sanlúcar de Barrameda in the Jerez Denomination.
Chipiona is best known for the production of Moscatel (Muscat) of Alexandria grapes. All the Jerez bodegas source their Moscatel from here and César Florido has the best vineyards.
Bodegas Cesar Florido has been family run since the 18th century they are one of the oldest producers in the entire region. Unlike many bodegas, they own all of their 21 hectares of vineyards and make and age the wines exclusively in their traditional style bodegas. César Florido, 5th generation owner, continues the production of these wonderful artisanal wines. This is the first time the wines have been seen in the UK since the 1920s.
Fino: The Palomino grapes for the Fino comes from their “Miraflores” vineyard. The wine is aged all year round under “flor”, a veil of yeast that gives their Finos a unique fresh, salty character, accentuated by their proximity to the Atlantic – around 50 metres – closer than any other Jerez bodega. The vines are 20 years old on the classic white albariza soils.
This Fino is an incredibly versatile wine. A wonderful aperitif on its own or as a partner to anchovies, olives, almonds and cured meats. It will seamlessly match all manner of seafood, Asian and Mediterranean dishes.

Moscatel Pasas Late harvest: The sugar level in the grapes are intensified by sun-drying them on sand for 2-3 weeks. A partial fermentation and fortification to 15% is followed by an average of 3-5 years oxidative ageing in chestnut barrels using the traditional solera system of the region.
The resultant wine is complex, unctuously sweet yet easy to drink. This is their signature wine and has a limited annual production of 8,500 bottles.
It’s best served chilled and absolutely delicious with ice cream or chocolate
