These are small, round and jet-black lentils with a slightly nutty taste. They keep their shape and a little bit of bite when cooked which means they can hold their own in all sorts of salads, stews and soups. It also means they look so fantastic, contrasted against all sorts of other colours: wedges of roasted orange squash, for example, pan-fried pink salmon, white chunks of feta. They don’t need any pre-soaking and will be ready after about 20 minutes cooking.
